Chinese food everywhere – USA, Japan, Europe, etc. – is almost always localized for the market. Most shops have no interest in being culinary ambassadors – they just want to pay the bills and put their kids through school.
30 years ago I backpacked through southern China for a month. Unfortunately, the tourism infrastructure there was not yet ready – I only had a small handful of hot meals. Most were served tepid. So I guess I got to eat “real” Chinese food as most Chinese throughout history experienced it… including a couple bouts of food poisoning.
One thing I will never forget (as a positive thing) was eating Szechwan chicken in the dinning car of a steam-powered train while riding through Szechwan province.
My first time in Southern China was 1985. The contrast with Hong Kong was remarkable, and not in a good way. That said, we had a 14 course feast at a Buddhist monastery about an hour or two outside of Xiamen that remains one of the greatest meals I’ve ever eaten.
In later visits, the quality of the food in the Mainland improved remarkably- better ingredients cheaper. You can walk down the street in Guangzhou or Fuzhou and feast on amazing stuff from the street vendors.
When I was in Okinawa, I went to a local “Italian” restaurant. That was…..interesting.
Their version of tacos were odd, but still tasty.

Many “Mexican” restaurants in Tokyo have “Taco rice” on their menus without any understanding that this particular item comes from Okinawa and is something that was served to drunk Marines who just wanted something “like” Mexican food. These establishments often don’t even understand that it has nothing to do with Mexico.

About 15 years ago, I was at a vacuum tube enthusiasts’ conference in Langenargen, Germany. I was walking through town with a fellow Californian when we spotted a Thai restaurant, which given the size of Langenargen, surprised us. We were overcome by curiosity and went in. The proprietor was a Thai fellow whose German was pretty understandable, so I negotiated the menu with him, emphasizing that we were Californians and accustomed to the real thing.
Our dishes came out, my friend took his first bite, and he started laughing. I took a bite and… nothing. It was flavorless. “All spice and flavor has been scientifically removed with German efficiency,” he observed.

But in general – why would that one aspect of one’s anatomy be so different?

That’s always been my issue at Chinese, Thai, and Indian places. They really don’t believe me when i tell them I want it native hot.
There was a Southern Indian restaurant near where Spud and I used to live that had terrific food. My first time in there, I spotted the hot chile pakoras on the appetizer list and ordered them. The waiter just stared at me.
“What, am I the first white guy who ever ordered this?”
“Yes, sar!”
So when they came out and I started eating them, I noticed that the kitchen staff were all staring out the door at me to see how I’d react. I grinned, gave them a thumbs-up, and the rest of my meal was satisfactorily spicy. That place became one of our regular hangouts.
At the good Chinese place in Cleveland, I learned that the girlfriend’s family knew the owner. After getting round eye spicy, he came over to ask how the meal was, and I mentioned it could use some more heat. He brought the chili oil over to the table, and warned me twice as I was spooning it on my dish. I mixed it in, and started eating it. The owner did a double take at me just chowing down on it after that, and brought out chili paste for me.
The local Indian places don’t do that shite, if you ask for a 9 out of 10, you’re going to get it.
I ordered a dish at an Indian place in Findlay, OH. They did heat on a 0-10 scale. I ordered the 10. The owner came out to meet me. Couldn’t believe a white guy would order that but I knew it was only midwestern hot
Flip side of that story. An old friend had a buddy in the military who had been born and raised in Alabama and was ethnically Chinese. Took him to a restaurant in LA’s Chinatown and he said every single worker in that restaurant came by their table to hear this guy talk.

I had fake and real many times and both are good. I also think the criticism of Americanized Chinese food is some times bullshit. Several Shanghai restaurants I went to had a sweet spicy sauce accompanying the dishes. It could best be described as General Tso sauce.

See, I like this. She is in Minnesota, not China. Her customers are Minnesotans, not native Chinese. She cooks what her customers want, and has adapted to what they want. She’s using more local ingredients, and catering to the local palate.
I see all of these as unalloyed goods. The alternative would probably be involve lecturing her customers about what they really want, or how they don’t understand real Chinese food, or something less pleasant than what she does.
If you don’t like her cooking? Don’t eat there. But for Zimmern to demand some kind of ethnic purity and the cessation of any evolution of cuisine doesn’t sit well with me at all.

What’s the big deal with saying there are horseshit Chinese restaurants? They exist everywhere. There are a lot of shitty Italian restaurants too.

Years ago we went to an over rated Italian place in a very ‘Anglo’ place. It was owned by Italians but it clearly catered to local tastes. I ordered cannelloni and it was terrible. The waiter saw something was off in the way we were acting (joking about it to be specific) and asked if anything was wrong. So I just said, ‘it’s an interesting cannelloni’. He replied, ‘we make them fresh here.’
As if something fresh can’t be made badly.
So it happens.
Another place, in upstate NY, bragged about their home made sausage. So I ordered it. It was a thin, dried out piece of bark. I was so stunned they would serve that, I walked out without even bothering to argue about it. Anyone who can serve that to the public clearly lost interest in their craft and wasn’t going to give a shit about my concerns.
‘Anglo’ area. Some background. In Montreal the city is essentially divided this way: Whenever someone says the ‘East-end’ that’s where the French Quebecers/Frenchspeakers are. When they say the ‘West-end’ and ‘West-Island’ that’s where the Anglos/English speakers mostly are.

The profit margin on restaurants is razor thin. They have to sell what people want. It is a tough business. If they are trying to sell to people with different tastes than their own there are going to be a lot more strikes than hits.

I miss quality American Chinese food. I blame the trend of “healthy” eating & anti MSG, followed by universal food service supply of basic sauces (too sweet, HFCS, and tastes alike) & components. It’s not like it used to be. Gone are the days of good sweet & sour pork, kung pao chicken, or chow mein.
On the other hand, finally getting straight off the boat, or plane as the case may be, Chinese restaurants. Usually trend is open with minimal English, high quality food and slip toward fluent waitstaff and poor quality meals and then closing. Thankfully the large numbers of Chinese students has managed to keep number of newly opening restaurants up.

I was at my local pizza and beer joint, where they have the big pizza ovens behind the counter (really big; a quick google didn’t turn up anything like them). I just noticed that they look like scaled down versions of our morgue coolers. I couldn’t stop laughing, and couldn’t bring myself to explain it to the rather puzzled (and adorably tatted) server filling my growler.
I wouldn’t be worried about the empty drums – it’s the ones that are full and have weird looking seals on them you gotta watch out for.

This is true of all tech. I am a recovering early adopter. I, for example bought a $500 DVI player when Phillips first released them. It was magic tech and going to allow me to play games and watch movies in crystal clear video. The tech was magic, and in its reincarnation as DVD actually delivered everything it claimed. DVI died in silence. It always takes a few iterations to identify and then work out the bugs. With guns, cars, and other things that can go boom you really don’t want to be the Beta test.

There, Chloe Angyal, a guest from Feministing, said:

Certainly, it would be wrong if our culture hated girls simply because of their gender. But is the reverse also true? Or has it become acceptable — sometimes even advantageous — to disparage boys?
Mary Curnock Cook, who served as the head of the U.K.’s Universities and Colleges Admission Service, pointed out in an interview with The Telegraph, “Boys underachieving in education is becoming pretty normalized — everyone knows it yet no one is doing anything about it.”
Cook also explained the unique nature of the widening educational gap between genders, stating, “other disparities in education — such as the gulf between rich and poor children — are narrowing, but the gap between boys and girls is getting wider.”
Why isn’t anyone addressing that problem? The title of The Telegraph’s story, “Boys left to fail at school because attempts to help them earn wrath of feminists,” provides the explanation.
Even further back, a 2004 piece, “Why Aren’t Boys Learning?” quoted Michael Gurian on the reasons boys are failing. He said:
Educators often lack understanding of ‘typical boy traits’ like aggression, verbal and emotional reticence, and interest in objects moving through space. An early elementary school student can learn extensive math, geometry, problem-solving and social skills from LEGO, building blocks, and woodworking projects. According to Gurian, current curricula and classroom structures deny boys these opportunities.
Do classroom structures really deny boys Legos? Kindergarten teacher Karen Keller did exactly that in pursuit of “gender equality.” She explained this to the boys, stating, “I always tell the boys, ‘You’re going to have a turn’ — and I’m like, ‘Yeah, when hell freezes over,’ in my head.””

I think this is why 100% gender-integrated schools are less than ideal. Boys and girls mature differently and get intellectual stimulation from different things, and the educational methods should reflect this. The current method is basically to gear everything towards girls and pressure the boys to conform to it.
The ideal would probably be schools where most of the academic work is done in segregation, but things like lunch, recess, and gym are integreated. They would learn in ways that are better suited to them while also learning how to interact with the opposite sex.

It is verboten when a male benefits in any way. It is verpflichtend (mandatory) when only females benefit. Except, of course, that stacking the deck teaches the girls that success is their right without effort, so in the long run they are screwed as well.

What’s really perverse is that I’ve pointed this out and gotten responses along the lines of: “Men should just put up with it because women were oppressed and denied opportunities for all of history.”
So males who didn’t do any oppressing have to kowtow to females who were never oppressed. Kinda like how white people who never owned slaves should have to pay reparations to black people who were never slaves.

If you buy it online, they will want to ship it to a local FFL holder anyway, who will charge you a fee for the service of transferring the gun to you legally.
