Since I am vegan, that means no meat for me, so these 5 Iranian dishes are at the top of my list.

1. Shirazi Salad سالاد شیرازی

I love, love, love this dish.

Named after the Shiraz region in Iran, this is a refreshing, delicious, and vegan, salad made of cucumbers, tomatoes, and onion. Spiced with mint, lemon, and sumac (I order mine from Amazon), it’s perfect for those horrible hot icky summer days that we’re having a lot of here in the States.

The prep for this dish really couldn’t get any easier. You throw all the ingredients into a bowl, stir, chill, and serve. You can find a great recipe at AllRecipes.com.

2. Shirin Polo شیرین پلو

Known as jeweled rice, this is a traditional Iranian sweet rice dish that is bright in colour and is cooked with raisins. Usually served at Nowruz (Persian New Year), weddings, and basically any other special occasion, this is a staple in Iranian cuisine.

It’s a little too sweet for me to have as a main dish, but it goes great as a side.

Shirin Polo is traditionally made with butter (#NotVegan), but simply replace the butter in this recipe from Persian Mama with margarine, and you’ll be good to go.

3. Ashe Reshteh آش رشته

Oh. My. Ashe Reshteh is an Iranian noodle soup and so freakin’ good. I have had dreams about this soup. Made with a variety of beans, noodles, and herbs this soup is hearty, filling, and comforting.

Most recipes call for beef or chicken broth, and yogurt as a garnish, but this vegetarian recipe from ThePersianPot.com can be made vegan by omitting the sour cream.

4. Dal Adas دال عدس

Lentils, anyone? Dal adas is a lentil stew-type dish hailing from southern Iran. I love lentils; I could do a whole post about my favourite lentil dishes. Dal adas features red lentils, tamarind, potatoes, shallots, turmeric, and cardamom. Serve over rice.

The Persian Mama strikes again with another great recipe.

5. Khoresh Bademjan خورش بادمجان

I’m not a huge fan of eggplant, but this dish of eggplant tomato stew is actually really good. Simply omit the yogurt sauce, and this dish is vegan. One of my favourite things about khoresh bademjan is that you can cook it in a crockpot as long as you do the onions and eggplant in a pan first.

            if you ever get the chance/interest in weekending in New Paltz, i encourage it.

            the best time is the fall (see: leaves). also it helps if you’re a big fan of “outdoorsy recreation” because that’s all there is to do. Hike, Bike, Climb. Also, maybe drink beer in town.

            if you like climbing or mountain biking, its some of the best in the northeast. (re: the mountain biking bit, it has more of the “ridgeline trekking” type rather than dynamic downhill/uphill, but still great)

            It has a nice summer camp look to it. If I lived within driving distance, I’d go for sure. If you’re stuck in the “city life” routine, it’s the perfect escape.

            I have a similar routine here, but in the desert. A 2 hour drive, and it’s a completely different environment.

          Easier than Kennesaw Mountain?

          1. Just across from those ruins is a communications tower that has to be serviced, so 85% of the trail up the mountain is a maintained gravel road. Only the last half-mile or so is closer to a real hiking trail, and even that’s easy.

            It also means the trail is a bit boring and extremely popular. The last time I climbed the mountain, I got there around 7, took a detour to Echo Lake before going to the peak, and got to the top of the mountain about 10:45. That was the first time I saw anybody else. On the way back down the mountain I must have run into a dozen groups climbing up.

            The one time I went up the north side (only to Echo Lake, it’s a longer trail and I didn’t have time to go all the way to the fire tower), I ran into very few people. Both were a Friday in the shoulder season.

  15. I found a recipe for something really similar to that Shirazi Salad years ago in the Cordon Bleu cookbook (IIRC) and I do it a few times each summer. You’re absolutely right, when it’s hot and muggy cucumbers and mint are absolutely perfect. The one I’m thinking of does English cucumbers, red onion, tomatoes (Big Boy or Beefsteak, something big and mild), mint, and red wine vinegar. Cut it all into chunks, toss it with olive oil. You can do a variant with melon (watermelon actually works nicely, but cantaloupe is more common) and you drop the onions or swap in Vidalias. I’ve done that a couple times and I liked it with a rice vinegar and canola oil, but any non-olive, non-peanut oil would probably do well. Balsamic might be interesting as well.

    And yeah, coming from somewhere on the agnostic/atheist platform, I like to think that while my beliefs can be described as such, I’m not part of that subculture or community. Just as I’ve met people who follow vegetarian or vegan lifestyles without being members of those communities. Which do indeed seem to attract…people who are challenging to get along with. And yes, I’m saying that on a libertarian website.

      I think it would sound better if the changes were on the same number of bars, or at least cyclical (think of Brazilian or Caribbean music using a clave. No matter how complicated the rhythm is, it will come back to line up because math). It’s something I’ve noticed with instrumental “jam” R&B from the late 60’s and 70’s. They aren’t songs with lyrics and refrains. So you get changes on the 32, then 8, then 4, then 8, then 16, then whatever, etc.

        i think there’s a big difference between US ‘dance’ music of the 60s-70s because it tended to be instrumental version of pop music, in most cases. whereas in the latin scene there was always a completely independent “Dance” structure which was purely instrumental from the get-go. the blending of the two did involve a lot of arrangement complexity. I’m a big collector of people like Willie Bobo and Mongo Santamaria, and most of their stuff tends to be arranged more like American pop songs than traditional latin music. … iow, eschewing the cyclical latin structure, and instead ‘americanizing’ the thing, so there’s a verse, chorus, bridge, etc.

          OK. By clave I mean a call bell or key pattern (which was often played with woodblocks with the same name). So to avoid confusion, let’s leave Cuba to avoid the son fusion of African drumming and Spanish guitar, and all it’s complexity I don’t feel like explaining, and you might know already, and set sail to Brazil. Bossa nova is so obvious it’s a preset on some Japanese drum machines. You know what Joao Gilberto and Stan Getz, or even Aphex Twin, sound like. Free from the pedantry of an enraged Cuban, it’s simple enough it can be written in 2/4. It can be played as “classical” guitar, instrumental jazz or dance music, or literally songs where people sing. No matter how you slice it, it’s still bossa nova. So no matter how you arrange it, it has the same “clave”. Whereas, much of the african-american instrumental music from the late 60’s and 70’s isn’t based on a rhythm key. Yes, it also has a Bantu and European influences, but it isn’t coded. So you have the same situation with 50’s (and earlier and later jazz) where drummers would roll from one pattern to another (although unlike jazz the tempos remained constant). That doesn’t make it bad. But it lacks the psychological reward of predictability of “hey mambo!” (which is redundant).

    Sumac tea is pretty good. Takes a few days to cold steep. Tastes like a mix of iced tea, lemonade, and cranberry juice.

    Oh, and make sure you get red sumac. White sumac is poisonous.

    On was roasted eggplant, with tahini, lemon juice, and olive oil. Then using pita to eat it. It was great for this carnivore.
