I am new to the ways of vacuum saving food, but I am already in love. SP & OMWC gifted me with this FoodSaver for my birthday, and I can’t get over how awesome it is.
One of the biggest challenges for me being vegan is that it’s very hard for me to get fresh produce unless I hop over to a farm stand, and they almost never have lettuces. With my FoodSaver I’m able to vacuum pack my produce, tofu, and leftovers, and get many more meals out of them. I haven’t tried it yet, but I will be trying to reheat my vegetables using the sous vide method now that I have my food so well sealed.
A Fuckload of Mason Jars
For a well-stocked vegan kitchen (where you also don’t need to spend hours every night cooking), you really need a fuckload of Mason jars. One of the great things about the FoodSaver is there is an accessory attachment you can order and you can vacuum seal jars. Now, as the package will remind you about 10 million times, this is no replacement for canning food, but you can do salad jars. Throw some greens and veg into a jar and seal it up. It can last in the fridge for over a week.
The meal prepper in me is planning to do this Asian inspired salad jar, Buddha bowls in jars, oatmeal in jars, peanut noodles in jars, and anything else that comes to mind.

I originally got this award winning spatula (another gift from SP) for breadmaking, but I use it for basically everything. It’s rigid yet flexible. It does the best job scraping bowls out of every spatula I’ve ever used.

Well, that’s the first day of MBA orientation for UW-Madison under my belt.
I don’t mind having an opportunity to meet my classmates, but a week long orientation for graduate school is absurd. I had a two day orientation for my undergrad, and even that was excessive.
Are they showing you where your classes are? I am a completely in the dark as to what a grad school orientation would consist of. How to take notes? Don’t they know you people have done the school thing before?
We spent 90 minutes on the academic honor code alone. I am not looking forward to tomorrow’s session on ‘unconscious bias’.
The academic side of this program is fantastic (Wisconsin grads come out the other side with fantastically useful skills and commanding excellent salaries), but God damn if they don’t want to cram you into the Madison bubble.
On the other hand, Thursday has a session on efficient use of excel, so that’s nice.
When I had a real job I knew how to use excel efficiently. Ask the Indonesian surveyor dude on crew for shortcuts. He was a genius.
As to the Madison Bubble, do they make you wear yellow socks or are those now outlawed since that annoying ass was #metooed?
Thankfully, there was no PC nonsense today. We just met classmates in our department and signed up for classes. Tomorrow is orientation for all graduate TA’s on campus. I’m sure we’ll begin to cover that stuff tomorrow.
I started an online pharmacology course today, while waiting to get into the program about which I posted (which won’t happen until spring, and maybe not then).
The first 15 points toward my grade are: 10 points for participating in the “ice breaker” discussion on the forum, following a very specific set of things to “share” and replying to at least two classmates’ posts in a substantive manner; and 5 points for filling out a questionnaire about what I hope to get out of the class, and can I use technology well enough to take a class online. *sigh*
This follows my surprise finding out only yesterday that I needed to do a mandated anti-sexual violence training before I could begin this class today.

It’s a generalist program, and that’s really what I’m looking for, but I imagine that I’m going to steer towards project management. I’m a university employee, and the tradeoff for making probably 20k less than I’d make in the private sector is a fudgeton of paid leave and tuition remission at UMD system schools, including grad-level credits, so I figured I’d be a fool to leave that on the table.
I’m a web developer, and I just turned 40, and I don’t want to be a web developer (or even necessarily in IT) when I’m 50, so I’m trying to use this as a second chance to get the business degree I should’ve gotten as an undergrad. I still don’t know what I want to do with my life besides have money and be a gentleman of leisure, so I figure an MBA is a good general background for things that interest me but that are also in some demand. I’m pretty good at analyzing things, making plans, and figuring out what other people ought to be doing, so this seems like the best bet.
Also had my first day of grad school orientation. It’s also 5 days but 3 days are devoted for TA’s and preparing you to teach your first class on Monday.
I had none of that when I went there for grad school. They did keep the engineering campus away from the rest of campus.

The food saver will save you a ton on meats. I buy when on sale in bulk then seal and freeze. They will keep without freezer burn for over 12 months.
Cheese is another cost saver. I buy a large wedge op Parmigiana Reggiano cut off a few chunks every few weeks for shredding and it keeps for months without any mold. The same for cheddar.

Thing is though, over the last decade or so I’ve noticed people listing things they don’t like as allergies (perhaps not on medical documents, but what they present to the world). My sister in law said she was allergic to bell pepper, finally after years it came out she just didn’t like them. My mom’s boyfriend says he’s allergic to something about a cigarettes, I don’t know what. When he sees me have a cigarette and then I’m around him he coughs loudly and gags. The odd thing, if I’m around him the same amount of time later after I’ve had a cigarette and he didn’t see it he’s fine.
I think we have to try one. We almost exclusively buy produce, veggies, meats, and cheeses. I’m especially interested in if it can save some time for unused produce, especially leafy greens.

I think you need a special attachment or jar-type thing to work with delicate vegetables. I have one but I only use it for meat.
I’m a huge fan. I vacuum pack almost everything. I have specialty containers from the company, as well as zip bags that have a valve so I can vacuum things that are used frequently, like cheese. Then OMWC can just open it like any other bag and later on, I just re-vacuum it. Brilliant.
I have the mason jar attachment because I love to store dried goods in them and I often do salads in jars, especially when traveling. I can just throw them in a cooler and have inexpensive healthy food on the road.
I put the firmer items like chopped carrots, radishes, canned chickpeas, nuts, in first, then cram the rest of the jar with chopped romaine or other greens, then vacuum it up and refrigerate.
Speaking of romaine, I store all my romaine for salads chopped and vacuum-packed in mason jars. As soon as I get it home from the store, I wash, chop, salad spin, and vacuum-pack.
I have photos of my produce drawer full of salad/romaine jars lying on their sides. I can fit 6 quart jars at a time in a drawer.
Never had the food saver, but I have used those ziplocs with the pump, that is nice. No need for another counter waisting machine.

Good spatulas are hard to find. I need it to be stiff but flexible, have a sharp edge and not scratch non-stick pans. By spatula I mean the tool you flip eggs with. My wife refers to me as the egg-spurt. I have mastered eggs – over easy, over medium, hard, scrambled, eggs benedict, eggs rancheros, etc but I need the right tools.
Telling you Suthen, those cheap silicone ones I have are the best. And I mean the test is flipping eggs in a small pan, agreed. Almost perfect. And I have a lot of them, some from 30 years ago.
If they are in a pan, why do you need a spatula to flip them?

I flip eggs by lifting the pan off the heat and giving it a semi hard forward motion followed by a gentle catch and intentional lowering stroke thus not forgetting the fragility of the yolks.

That’s catchy. To be honest, I am not sure if I care if they tear down statues. I have always thought statues were kind of stupid, and it is not like the history of slavery is ever going to leave us. It is topic one in many circles of thought. I heard an NPR story on the way to work the other day that I am too lazy to look up. Topic was how to talk to your progressive white friends about racism because they think they are immune and not racist and may even have brown or black relatives or friends. It was really the first time I heard seriously that all white people are racist regardless of how they treat people, think, and or act. You are a mother fucking racist if your skin is white. So all those white college kids can tear down those statues and I say have at it, but when that does not prove your non-racism to the ones making the judgements what are you going to tear down next? That is what kind of concerns me.
Communally owned property is a bit sketchy, in the current legal environment, but still not something i would condone destroying.

My favorite is the whole notion of “assigned gender” as if doctors arbitrarily proclaim a baby to be a boy or girl.
I do believe gender is a social construct to some extent, but I also believe that, like a lot of social constructs, it tracks biology. I’m male, my wife is female, we’re both Americans who grew up in the same area and are from roughly similar backgrounds. I’m about a hundred pounds heavier, slightly lower BMI, and nearly a foot taller. That’s not because I watched a lot of John Wayne movies as a kid. Masculinity is a social construct, sure, but there are masculine traits that carry across cultures and societies, and they’re linked largely I feel to physiological differences. I’m just saying, maybe the construct occurs because it reflects genuine biological differences. And yeah, shit, if you feel like a woman but you’re a man, maybe something else is going on.

OT: As I get ready for another day at my stressful job that I already hate, I’m feeling pretty bitter about this “go to college” line that is parroted to every child in America.
It’s like if they told every schoolkid to put money in the stock market. It’s drilled into their heads from day one that their ultimate goal should be to buy stocks. On occasion, there’s a brief mention of learning how the market works and picking good stocks, but 99 times out of 100, all they hear is “put your money in stocks”. No teacher ever brings up the possibility that stocks may not be a good idea based on one’s financial status and risk tolerance; everyone is simply told that if you don’t buy stocks, you’re consigning yourself to a life of wretched poverty.
This would be pretty stupid advice. Yes, it’s good to buy stocks in some cases if you know what you’re doing, but the incompleteness turns this good advice into bad advice.
I guess I’m trying to piece it together. Did you end up going to school for something you didn’t like and that’s why you hate your job?
What do you wish you’d done instead?
I just don’t handle stress very well, particularly when it’s caused by other people. I think I’m the kind of person who just needs to work more-or-less alone. Back when I worked at a factory, I did a lot of freelance writing and some affiliate marketing, and I was trying to make a full-time income out of those two things, but that’s very hard to do, so I went to college. Now I’m thinking that was a lapse in judgement. I should have kept working on my side projects; they could have been my full-time job by now. I can pick them up again, but this damn job takes so much of my time. My whole goal when I went to college was to find a job that doesn’t require a shitload of overtime and stress you out, and I can’t seem to find that. Every employer wants you to throw your heart and soul into the job, no matter how menial and unimportant it is.
Guess I better start working on writing again if I ever want to get out of this.
