Butter that you have put something else in, usually along the lines of herbs, spices, wine reduction, etc.

What blighted said. You’ve probably had them and not heard them called that, like a truffle butter on a steak.
This particular one has salted butter (I usually use unsalted so I can control the salt level), thyme, chives, flat leaf parsley, a drop or two of honey, and nasturtium blossoms (they add a peppery note). I grow huge pots of herbs on the porch and also have an herb bed with perennials like mint, chives, and oregano. I was out of shallots to dice, but they would have gone very well.
I’ve done many different variations over the years. You can add nearly anything depending on the end use.
Let the butter come to room temp, then mash the flavorings and add them in. Stir really well, or whip. You can refrigerate it in ramekins, or freeze it in tablespoon amounts, or use immediately. The flavor develops over time. Great to have on hand for finishing a dish.

I glued bacon on to one of them. That was a real crowd pleaser. I’m going to keep doing it until it’s perfect.
I had never heard of flat iron before moving to Idaho. Itās now my favorite cut. And everything is better with bacon.

I haven’t had good luck with cooking flat irons, so sticking to more traditional cuts. Grocery had prime bone in ribeyes on sale again. Picked up one for tomorrow.
If you’re dealing with a flat iron that’s below USDA Choice, sous vide is the way to go.
a couple of hours at 130F, and then sear the shit out of it for less than a minute on each side.
Steak is supposed to taste like….. steak. Flat iron is like steak concentrate. In spite of the lack of fat, it’s damn good. I think it’s way better than tenderloin.

Flat iron is pretty easy to grill. Smoking hot grill(500-600*) flip four times every three minutes. Let it rest and slice 1/4ā thick across grain.

In re: flat iron, I think it’s the best value added cut you can find. Hanger is a close second. The only thing it’s lacking, most of the time, is adequate fat. It’s perfect for a bacon wrap.
I messed around with Activa RM on a few cuts the other week. No recipe in particular, just experimenting. Flat iron with a bacon skin is outstanding. And I used Oscar Meyer bacon. There is so much room for improvement here.
Anything interesting with teres major? Butcher has been offering them lately, best use I’ve found for them is roast beef. Which is perfectly fine since I like RB sandwiches and the price is right.
If you can get a good deal, load up the freezer. It’s a good to great cut when the price is right.
I’ve never seen it here for retail sale. But I have heard that steakhouses using the term “medallion” will serve both tenderloin and shoulder tender, and you can’t really tell the difference.
As with any low fat beef , it’s great in sandwiches. If I found it around here, I’d buy several just to experiment.
Love hanger steak too. A tougher cut to find.
Iāve cooked enough flat irons that I know what to look for. Spider web marbling is what youāre looking for. The finer, the better.

Hanger steak seems to be something made up by TV chefs in the last few years. My grandparents were butchers, and I never heard of it until around 2013.
From the former butchers I know that is because it was chucked into the grinder for burger. They never sold it otc.
My club has had it for years. It’s a good cut, but incredibly small yield.
In a massive processing operation, it doesn’t really pay off to go digging for a 2lb cut.
I come from a long line of butchers (in fact, my last name is “butcher” in native tongue). From what I’ve been told, the best cuts come home with the butcher, and secrets are kept.

Not surprising, although a bit sad. I like the Treasure Valley a lot. My wife was born in Boise, she ended up working there for a couple of years much later, my gr-grandma is buried in Nampa, and we got married at the Ada County courthouse during a vacation.
Iām always tempted to point the rig toward Boise and just mess around for a few days but Iām not sure what there is to do in town. The Warhawk museum in the area is awesome if you are into WWII aviation bit beyond that I donāt know much about Boise other than its politics.

Single 15A circuit for two bedroom and a bath. Everything, lights and receptacles. Anyhoo, trying to figure out the non-logical cable routing downstream of the bath GFCI so I can splice in another receptacle (for the washlet). I think the guy ran it to the receptacles in the bedroom opposite, but it’s on the wrong side of the stud, unless he doubled it back to go out to outside receptacles.
I think I’m going to order an video inspection scope to try and peak inside the wall cavity.
Those permits and inspectors are totally necessary!!!

Yeah, but uncle-niece isn’t like father-daughter. I work with a guy who’s the youngest of his siblings by like fifteen years, and he grew up hanging out with his nieces and nephews as peers, practically.
Barring the unforeseen, I’ll be turning 40 in two weeks. When my dad was 40, I was 20, plus I have a few friends who had kids right out of high school, so I know that the 21-year-old girl at the bar could, in theory, be my daughter. And, frankly, given how I behaved in my teens, that could literally be true.

Not being a smart ass at the moment……but write about anxiety if you want. I don’t see it as a disorder at all and everyone has it daily just not to the extremes as other people. I experienced the extreme for a few years about 20 yrs ago to the point I would start shaking standing in line to pay for gas if there were other people in line. Somewhere I got over it and I trust you will too, but it is scary as fuck during an attack when you don’t expect it and damn sure don’t want it. I had a relapse when I broke my ribs and was jacked on percocet and a bunch of beer I shouldn’t have drank for a few months and probably killed my liver in the process, but I decided to fly and see family and freaked in the airport with an attack of which I had not felt in almost two decades. Deep breaths and three more beers fixed me right up in the airport and a mental attitude that all those people are more fucked than me. Hell, look at the way they dress. Hardly a Hawaiian shirt, which is the only truly adequate shirt, visible in the crowd.
I am almost pathologically shy in person. I can make myself deal with small groups, or larger groups if I know everyone really well, but I do not do well in large groups of strangers (unless I have a “role” in which to disappear). When I played music for a living, I vomited every single night before hitting the stage. When I taught fire/EMS for a living, the first 3 class sessions of every semester, I vomited. The first 10 minutes of every single class all semester I was nervous. Once I realized people liked me, I was OK. For the night.
This community is much more like a small group of friends. I have no trouble sharing posts or commenting here.

How much of being anxious in groups is about fear of rejection? Public speaking turns me into a rambling loonatic where brain goes into autopilot. People come up to me afterwards and say stuff like, āI canāt believe you said that.ā Generally turns out well, however.
My first speaking in a large meeting at my last good job my voice cracked and I felt bad for the guys having to listen to me fumble through what I was supposed to present that was handed to me by someone else. I felt worse for the group to suffer through my embarrassment than I actually felt embarrassed for being a horrible speaker with cold material. Guys looking at the floor and adjusting their collar sort of stuff. I was horrid. The next time I had to do it I prepared the material and a keynote (macs power point and far superior to power point) presentation I could follow and throw in relevant pictures and jokes to the topic. I was later told I was the best person in that position they ever had. Speaking in front of a group is a motherfucker.
I am actually great at teaching or speaking in front of groups. But it’s because I prepare to within an inch of my life and know the subject matter inside out. After 10-15 minutes I can just relax and let my personality show and it all goes swimmingly.
I refuse to speak in front of anyone cold. Not happening.
My situation was in taking over a position on a rotational crew from a back to back and he just handed me stuff and said, “read this”. It was seriously traumatic for everyone involved. After the same weekly meeting a few months later a pilot who did all he could to avoid the meetings due to my first experience came up to me and shook my hand and said, ” that was awesome.” Unfortunately that job ended.
Speaking cold. I went to my wifeās friendās wedding. Never met the couple before that. At the reception, the MC started with, āFirst, weāll listen to a speech about the couple from a close friend of theirs. Everybody, a big hand for…ā. When he finished that with my name, I almost choked on my bread. Cold speech, for people I donāt know, in front of 60 people, in Japanese. Needless to say, I didnāt nail it.
That makes my experience sound like a walk in the park..wow Did you make “when I dated the bride” jokes?

Thick hair is no joy. I’ve been buzzing mine to the scalp for ~15 years. I dunno, it traps in the heat or something.

No thank god. Northern Idaho where Iām at is dry. Go 150 miles further north and it gets a bit humid in the spring. I was stationed in TN/KY for almost six years and wanted to kill myself over the humidity. Nasty stuff.
I get that the Mississippi can add humidity, but from us Gulf Coast dwellers…fuck right off!
There is a reason I don’t travel further south than NYC.

Due to some tangential discussion Gilmore got me to start listening to Hendrix right now. Holy bejeesus salad on a cross, that dude was off the charts amazing. Shame he died so young. And I still suspect murder.
Yeah, I go through periodic Hendrix phases. You can just sit and listen with headphones and marvel at the sound he was able to create. It just sweeps you away – and just with a trio and some fairly primitive equipment. I can’t think of anything else that far into the hard rock realm that I would judge as calling for headphones. There really isn’t anyone else like him, before or since.

Seriously, I am really interested in almost anything that interests Glibs*. When people are passionate about a subject, they can communicate the information and interest well and I end up learning stuff, which I love.
*I am not really into looking at women’s breasts since I have a pair that I can look at whenever I want, and I am probably the straightest straight woman ever born.
Fair enough. To be honest, I was unaware of the complexities of the business until I joined the company about 5 years ago. It’s fascinating stuff, IMHO.
